Chipotle Roasted Delicata Squash

A simple dish that can be sliced up in about 5 minutes and on the table 20 minutes later. If your weren’t aware, Delicata squash skin is 100% edible, so do not peel it. Wash and roast - thats what these little gems are made for.

Serves 2-3 - nutrition info based on 3 servings. 1 squash

1 1/2 tablespoons Canola Oil

1⁄2 teaspoon Sea Salt

1⁄4 teaspoon Chipotle Chile Powder

1 White Onion sliced

1. Wash squash and slice into1/4”thick rings. Use a spoon to remove seeds.

2. Place squash, sliced onion, salt, chipotle pepper, and oil together and toss onto sheetpan.

3. Bake at 350F for 20minutes until squash is tender and onions begin to crisp.

4. Serve and garnish with chopped parsley, cilantro, or chive.
