Leftover Fajita Salad

Restaurant dinners usually have twice as many calories as you need in one meal, so save some calories and put half of your dinner in a box before you get stated. Don't over eat and help your body feel nourished. Next time you grab fajitas, save 4-5 strips and make salad with it for lunch!

Makes 2 salads:

  • 6 ounces Leftover Steak

  • 5 cups Spring Mix Lettuce

  • 1 cup Cherry Tomatoes

  • 1/2 cup Guacamole

  • 2 tablespoons Olive Oil

  • 2 tbsp salsa

  • 1 lime Lime Juice

  • 1 pinch Kosher Salt

  • 1 pinch Ground Black Pepper

  • 2 tablespoons Mozzarella Cheese

  1. Using leftover flank steak slice and cut into small pieces.

  2. Cut tomatoes into halves.

  3. Place lettuce on plate, top with steak, tomatoes, cheese, guacamole, and salsa.

  4. Season with salt and pepper and toss to combine flavors and enjoy.
