Summer Chia Breakfast Parfait

The ancient Mayans thought that chia seeds provided sustainable energy, which in fact, "chia" is the ancient Mayan word for "strength."

Chia seeds might be considered a miracle food for many people who are diabetic or trying to lose weight. Chia seeds for 1 oz have 12 grams of carbohydrates, and there are 11 grams of fiber, which ultimately means that blood glucose remains almost unchanged when eating them. Chia seeds are also packed full of protein and omega-3 fats, which help wight long term weight loss success. Fiber, protein, and fat help people feel full longer, ultimately deceasing the need to eat and helps keep away those hunger cravings many people have.

Topping this chia pudding with the fresh fruits of the summer give a really great sweet option for breakfast or a snack that's sure to make you want to service this one again. If you want to speed up the prep time - use about 1 cups of fruit like strawberries, blueberries or sliced bananas.

Makes 2 servings:

  • 1-1/2 cups almond milk

  • 3 tablespoons chia seeds

  • 2 Peaches

  • 1 Kiwifruit

  • 2 tablespoons Granola

  • 2 teaspoons Honey, Agave, or Maple Syrup

Overnight Prep

  1. Pour the almond milk into a jar or a glass container.

  2. Add the chia seeds and stir with a spoon.

  3. Let it stand for about 10 minutes then stir well one more time.

  4. Place the jar into the fridge and let the chia seeds soak for at least 4 hours or overnight.

To assemble

  1. In a jar or glass, layer the chia pudding, diced fruit, granola, and honey.

  2. Serve.
